How do the Flintstones celebrate Christmas, if, Jesus Christ isn't born yet?

The flintstones is set in the future, after the apocalyptic collapse of society. That's how they know what televisions and lawn mowers are, but not how to build them properly. They just do the best they can with what they have left. This explains how, in an episode of the Jetsons, when Elroy builds a time machine to travel into the future, he ends up in Bedrock with the Flintstones. He thought his time machine malfunctioned and carried him into the past, but it didn't. It worked perfectly and carried him forward in time, to beyond the Apocalypse.

What is the perfect time to start playing Christmas music?

Everyone has their own opinion on this I’m sure. Most people fall into one of two categories. Either they wish to keep Christmas music within the confines of “Christmas time” (the month of December) or they consider the musics purpose (to honor and celebrate the birth and life of Jesus Christ) and therefore think that Christmas music can be played anytime.

Of course there are many “Christmas songs” that have nothing to do with Jesus whatsoever (Rudolph, Frosty, Santa, etc.).

Ultimately, listen to and sing what you want when you want. Do what makes you happy.

What is a sign we are close to Christmas?

If you meant Christmas celebration, then I think it depends on the countries and the locations. Here in my country, it starts around early November, whereas in certain countries such as the Philippines, it starts on the first of September. The signs? Traditional Christmas music and decorations in the malls and many stores, especially major department stores. A man (sometimes a woman) sitting on a throne entertaining the Little Ones. Sales staff wearing red and green costumes soliciting customers to come in the store and shop.

If you meant Christmas Day, then simply check your calendar. I think traditionally it's usually on the 25th of December every year.
